Meatjunky's Slow Roast Pork Sandwich

Marinate your favourite cut of pork overnight in apple juice or cider, with salt and pepper, perhaps a little paprika and even some dry chilli flakes.
Wrap in tin foil with the marinade and slow roast for as long as possible, but at least for 4 or 5 hours, until the meat is tender and falls apart.
Meanwhile make your coleslaw; shred white and red cabbage, carrot, and apple and season with caster sugar, salt, pepper, cider vinegar, and mix with a little yoghurt - but only so that the coleslaw has a light dressing ... you don't want 'gloop'!
Fill a crusty white roll with your shredded pork, and top with a generous portion of crunchy coleslaw ... and serve at once!
